Up until a few years ago, there weren't many small scale models available for the the 71-73 Rivieras. Now there are enough to fill the trunk of a real Riv (though none of them actually represent the '73 model). Here's every one I've discovered.
By the way, unless noted, these cars are shown approximately actual size.
Premium X. This 1:43 72 Riv has some of the best detail you can find on a miniature boattail. The interior has a printed speedometer and dashboard badge, and even a correct looking rear view mirror. It comes in several colors including Vintage Red (yay!) with a white roof (dang!) It does not have any opening features, but does come in a nice display case. Expect to pay around $40-50 for it.
AlfaSlots. This is the model you've been waiting for... A 71 Riv SLOT CAR!!! Set up the track and get this one running! It comes on a TuffOnes chassis, so it has dragster rear slicks, but the wheels look like Buick rims. The body appears to be based on the Johnny Lightning casting listed below. It was available in many colors, so look for it on eBay!
Enamel Pins. I don't know the origin of these pins, but they represent a boattail Riv pretty accurately for their size. They are about 1 inch long (the small picture shows them actual size) and come in black or red. Hey, the red one with black interior matches my car!

Unknown Donk (Jada?). This 1:25 scale diecast model seems to have good detail if you're okay with the the 34 inch rimz and gold chain steering wheel. It has opening doors and hood. Jada makes similar models of other cars, so it might be from them. It goes $25 or so.
Truescale. I haven't seen this one in person, but the proportions on this 1:43 scale model look a little clunky from some angles. And those wipers should be tucked under the cowl. Doors and hood do not open. It runs around $50 on eBay. Like many of these models, colors include Vintage Red.
Unknown diecast. This 1:43 model shows up on eBay every now and then, usually from Europe. The brand is unknown. Details look crude, and there do not appear to be any opening features. The side mirrors look sloppy and out of proportion, if that indicates the quality. It usally lists for around $20.
Johnny Lightning. Every time JL releases a new variation of a model, they actually do TWO versions. The second is called a "White Lightning" and it is a limited production, randomly distributed mutation in which some detail (interior, chassis, engine block, hubcaps, part of the paint scheme) is white instead of the normal version. White Lightnings retail for the same price if you can find one in the store, or for a much higher price than the regular version if you find it on eBay. Here are all the currently available 1:64 scale 71-72 Rivs from Johnny Lightning along with notes on the White Lightning versions. There are also some variations in wheel and tire combinations, too many to list here. JL had two separate body castings to represent the '71 and '72 grilles (but the trunk vents are just tampos on the '71.)
Super 70s 1971, Olivine green (often mistakenly listed as black) (White Lightning has white hubcaps instead of silver)
Super 70s 1972, yellow (White Lightning has white hubcaps instead of silver)
Street Freaks Scrapin' 1972, gold lowrider (White Lightning has white chassis instead of bare metal)
Spider-Man 1972 (White Lightning has white interior instead of black)
Street Freaks Zinger Radical Rivvy 1972, yellow (White Lightning has white chassis and hubcaps instead of black)
Street Freaks Zinger Radical Rivvy 1972, blue (White Lightning has white chassis and hubcaps instead of black)

Classic Gold 1971, maroon (They call it a '71, but used the wrong casting, so it has a '72 grill. Bonus points for correct Buick rally wheels, though.) (White Lightning has white body instead of maroon. Sneaky!)
Poker 1971, gold with fuzzy green interior. These cars come with a poker chip and 2 cards. 5 of Spades is always visible, other card is random. (White Lightning has white interior and hubs, and the ENTIRE body of car is fuzzy green.)
Spoilers Revvin' Riv 1972, blue (White Lightning has white body instead of blue)
Big Boats 1971, Green. Sold in a set of 5 cars. (White Lightning has white interior. If you bought this set, one random car might be the White Lightning variation, not the entire set.)
By the way, the keychains you see on eBay are usually just Johnny Lightning or Hot Wheels cars with a chain attached.
Johnny LIghtning disappeared for a couple of years, but made a comeback in 2016. They released three versions of the Spoliers 1972 Riviera with a "money" motif. One version is green with a gold roof, one is gold with a green roof. The third version is the White Lightning, which is feaures a white body and tires and a green roof. No word on if there is also a White Lightning with a gold roof.
Hot Wheels. Geez, what took these guys so long? They finally released a highly customized '71 Riv in 2005. It was originally available in blue/green (fairly common in stores) and gold (harder to find, this was apparently a KMart exclusive.)
Hi-Rakers Series, purple with yellow graphics, jacked up on ridiculous looking wheels. They are reeeeeealy testing my loyalty here.
Lowriders series, red with white stripes. The sides of the car are enamel red, and the top is metallic Vintage Red (same color as my car!) Available only at Target. Sold for $2.99, but there's really nothing different about the casting.

WWE, World Wrestling Entertainment, Rey Mysterio. He's from San Diego. He wears a Lucha Libre mask. He's 5 foot 6 and 165 pounds. And he can kick your butt! I don't know if he actually drives a car like this, though. This was a Toys R Us exclusive.
2011Treasure Hunt Series. Thes are limited edition models randomly distrubuted with the standard selection of Hot Wheels. Vintage Red (oh boy!) with white top, gold stripes, faint ghost flames and gold chrome and interior. The first version is the "Regular" Treasure Hunt with one-piece wheels. These usually go for about $5-10 on eBay. The second is the much rarer "Super" Treasure Hunt with "Real Riders" consisting of treaded rubber tires on separate, more detailed rims as well as slightly more noticeable flames. These are much harder to find and might fetch $15-25 on eBay. There is a subtle difference in the packaging between the two versions... The S's in "Treasure Hunts" at the bottom of the card (and on the back) are dollar signs in the rarer version.
2012 "Thrill Racers" series. Similar to the "Hi-Rakers" model above but with treaded tires. Green with purple dinosaur graphics and yellow chrome and interior. Looks a lot like the real life Donkey Frog Riv. Not necessarily a good thing. There is also a red version with a blue dinosaur from the same series.
"Hot Wheels City" 2015. Green with "Mr. Gasket Co." graphics. This same design is also available in red/black and glacier blue/dark blue. The blue version is a KMart exclusive from late 2015.
"Hot Wheels Racing Circuit" 2017. Metallic Blue with Hot Wheels Flame graphics and white interior and bumpers.
MicroMachines. These were apparently commercially available only in Europe, but show up on eBay every now and then. They mix details from the '71 and '72. These models are only 1-3/16 inches long. From most common to rarest: red with black trim, purple and green with stitches, brown with silver and black trim, red with black swirls and yellow "39".
Lindberg. This was the only model of a 1971 Riv available in the 1970s. It came as a small plastic 1:64 kit. The interior is generic and sort of crude, the wheels are shared with other kits, but the body is a pretty nice casting. They came in several colors including red, yellow and orange. Rear bumper is often missing. The car is fairly rare, and the box is extremely hard to find. The box calls it a "1972 Super Sport", by the way, but model details suggest it is a '71.
Road Legends/Yat Ming. This is the only 1:18 scale model available of a '71 Riv. It's almost a foot long and is available in gold, cream, red, green, or black. Detail is good, not great, and there are couple of annoying discrepancies in the model, but still pretty cool. It has opening doors and hood and working steering. The model is bigger than the photos show. The car has a molded vinyl roof, which means even if they do one in correct Vintage Red, it will never quite match my car. Ugh.
Western Models. This 1:43 scale 1972 Riv comes from England, and is available in Vintage Red or teal. The red version is much more common. Nice model, but pretty expensive, usually running over $100 on eBay. It is also available as an unpainted white metal kit so you can match your own car.
Revell. This is just plain cool. This 1:64 Lowrider '71 Riv has axles that can be positioned up or down, and the trunk opens to show off the hydraulics. Here are all the versions that were available.
American Models. This unauthorized 1:25 '71 resin kit can be found on eBay usually for upwards of $75. It has an opening hood, but does not come with an engine, tires or wheels. AMT/Ertl's '66 Riv and Revell's '70 Skylark are good donors for the missing parts.
Unknown Resin . This unauthorized 1:25 '71 resin kit can be found on eBay usually for upwards of $75. It has no opening hood, and details like grill and headlights are molded into the body. It comes with tires.
Another Unknown Resin . This unauthorized 1:25 '71 resin kit has unusually good detail but seems to be missing the steering wheel, drivetrain glass and wheels. It can be found for about $65 on eBay.
Even More Unknown Resin . This unauthorized 1:25 '71 resin kit looks like it will need a lot of cleanup to look good. It appears to be missing the engine and wheels. It can be found for about $50 on eBay.
Race Master. Sounds downright evil. Cheap plastic remote control car that looks like a mutation between a boattail Riv and a mid '60s Corvette. You be the judge...
Gomez Gear. Here's an abstract clay model of a boattail. Is it coming or going? Value... Priceless!
